Carbon clean
Has anybody hand their engine carbon cleaned, if so does it make much difference to performance?

Nope, but I have heard anecdotal tales of removing all the carbon build up around pistons, rings, bores etc, then losing compression. On a high mileage engine it may cause issues if that is the case.
Hopefully someone who has actually done it will be along to advise you better.

"If it ain't broke: don't fix it."
However, if you want something to do, give your car a basic service - valve clearances; replace; plugs/points; oil & air filters plus oil change etc., close the bonnet and go for a ride.
You could give it a compression check and if it's within the manufacturer's tolerance leave it at that.
If you feel you are missing something read this before someone takes you for a ride.
