Now you have a choice to select the sender that gives the best reading on the temperature gauge.
What I would do is to use an infra red thermometer to determine what sort of temperature the engine is running at, then fit the sender that gives the most accurate reading. For example, if the engine is running at a temperature high enough for the thermostat to open, chose the sender that gives the appropriate reading on the gauge. That way at least you'll have a reasonably idea of what the engine temperature is.

Ok, FYG....
For a Cosworth conversion you need:
White collar Capri 2.8 sensor
Proper Capri 2.8 , 90 degree connector
Then she will register 3/4 on the temp gauge at normal operating temperature....

If you have a Scorpio green saddle sensor and a red Scorpio/ Granada connector she will always register at one of the bottom levels. It makes you think she is running too cold, but she isn’t.

Now she registers fine ( I think) about 3/4 at normal operating temperature, using white collared sensor and correct 90 degree bullet connection from a 2.8i

If you use the green saddle sensor from a Scorpio / Granada she’ll only get to the first cold notch. If you use the white collar sensor but the Scorpio red connector, she will only get to the second cold notch.
