My assumption is they are mk2 escort and from a jago jeep/Geep - any thoughts if thet'd fit a mk2/3 capri shell?

Looks to me like escort stuff. Pretty sure capri Timken (English) axles were 50" Handbrake linkeage looks different too.

I'd hang on and try to get proper Capri stuff rather than faffing about with this.
