Re: 2.8 Capri still overheating ???
Is the new rad a proper 2.8i item ? If it is then it'll do the job on a standard car.
Is the thermostat good and correct temp rating - is one fitted? even new ones can be duff and there are reports of 2.8i's running hot without one in place.
Correct caps on rad & expansin tank? plain non-sprung cap on rad, sprung cap on expansion tank is correct.
A leak, however small on the cooling system will allow pressure loss and boiling, the system needs to hold pressure like a pressure cooker so that the coolant can go above 100 degrees without boiling.
Usually one of these things rather than head gasket problems but....

Looking for a "better" rad is not a proper solution to your problem. A standard rad is fine for keeping your car at the right temp.
If you are going into the red, then there will be a reason for it, and it will be one of what Nige mentioned above.
Have you got you rad caps the right way around? The cap on the rad should not have a spring, and the one on the expansion tank should.

Re: 2.8 Capri still overheating ???
Agreed with Rich.
If the rad is new then you will only be masking a more serious problem by fitting a larger rad to keep the car cool.
Best off to get the problem sorted.
Try what nige said but also check the mixture with a gas analyser in the exhaust. Had my fuelling set by the local garage for about £40. Well worth it as the car runs great. If the engine is running lean it will run hotter than it should.
Also check the valve clearances, timing and the air filter before going to get the mixture set. Even if you don't get the mixture set then check these things to rule them out.
When you swapped the rad did you flush the block out? Could be you have a build up of crap in the block which is reducing the flow of coolant and causing the raised temperatures.
All the best.

Re: 2.8 Capri still overheating ???
So physically your car doesnt overheat? Randomly, does your fuel gauge have a mind of its own or give flase readings? The voltage regulator controls the temp gauge and the fuel gauge, if it goes wrong it can cause the fuel level to raise and the temp to fall or the temp to raise and the fuel to fall....just a thought. But as I`ve said before, the std rad in a 2.8 will easily cope, it certainly did with mine
