Mine doesn't run that much cooler than yours, usually just above midway on the gauge. Andrew. Just over midway is what I'm aiming for, I seem to remember that's where they should be. I'd leave things alone if its not leaving a big smoke screen behind you as you drive down the road
Just keep checking the oil level, don't let it get too low and give yourself a load of bigger problems

Have you done a compression check?
I'm not very familiar with the Essex engine. But experience of with other engines I've found that worn valve stem seals normally smoke on start up then clears fairly quickly. Or sometimes when you decelerate. This doesn't seem to be the case for you.
