I have pretty much the same problem. I was thinking of doing same thing, but maybe a small wideing at the same time, so that tires won't throw dirt and sand at the same time. Problem is all widening stuff is glass fiber.... and that can be forgotten right a way.

It can be done but, prepare also for failure. I have done it but it was totally pain in the ass. I dont understand why you would take off twin piston m16 calipers and fit single piston mondeo calipers .......even the lumpy old 4 pot princess calipers would be better .....no? One thing bigger/better brakes are better at is better control at the point where the tire looses traction and skids . S...
