Can you move the bottom flap by operating the lever without the cable connected? if so then you should be able to set up the movement by the cable. The LSD axle is the same ratio as the standard 3 litre (3.09 -1) if you fit a shorter diff then you will improve acceleration but at the cost of the top end and you'll find the car is revving higher at speed. Personally I would leave well alone.

The only thing I would mention is the third picture. I don't recognise the stop assembly on the back plate. Might be fine but it looks like it restricts the handbrake linkage quite a bit. I would go for HVLP personally, the paint goes a lot further and you'll get a better finish. Problem with cans is that you lose some of the pressure way before the can is empty and unless the can is specially mixed then even cans that are supposed to be the same colour often aren't.
